Ingredients:
1 1/2 cups chocolate cookie crumbs
1/4 cup unsalted butter, melted
2 lbs cream cheese, at room temperature
1 cup granulated sugar
4 large eggs
3/4 cup Baileys Irish Cream
1 tsp vanilla extract
1/2 cup sour cream
1/4 cup all-purpose flour
Directions:
Preheat oven to 350°F (175°C).
Mix chocolate cookie crumbs with melted butter and press into the bottom of a 9-inch springform pan. Set aside.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition.
Blend in Baileys and vanilla extract. Fold in sour cream and flour until just mixed.
Pour filling over crust in the springform pan.
Bake for 50-60 minutes, or until set. The center should still be slightly jiggly.
Allow to cool in the pan on a wire rack for 10 minutes, then remove the rim of the pan. Chill in the refrigerator for at least 4 hours, preferably overnight.
