This Baked Chicken Fajita Pasta combines all the flavors of classic fajitas in a creamy, cheesy pasta bake. It’s a delicious twist on two favorites, perfect for a hearty family dinner!
Ingredients:
• 1 lb chicken breasts, sliced thin
• 8 oz penne pasta
• 1 cup bell peppers, sliced (red, yellow, or green)
• 1/2 cup onion, sliced
• 2 cups shredded Mexican cheese blend
• 1 can (10 oz) diced tomatoes with green chilies
• 1 packet fajita seasoning mix
• 1 cup heavy cream
• 1/2 cup chicken broth
• 2 tbsp olive oil
• Fresh cilantro, chopped (for garnish)
• Salt and pepper, to taste
Directions:
1. Preheat your oven to 375°F (190°C).
2. Cook the pasta according to package instructions until al dente. Drain and set aside.
3. In a large skillet, heat the olive oil over medium heat. Add the sliced chicken and season with fajita seasoning, salt, and pepper. Cook until the chicken is browned and fully cooked, then remove from the skillet and set aside.
4. In the same skillet, add the sliced bell peppers and onions. Cook for 5-7 minutes until they are softened.
5. Add the diced tomatoes with green chilies, heavy cream, and chicken broth to the skillet. Stir well and let it simmer for 2-3 minutes until the sauce begins to thicken.
6. Stir in the cooked pasta and the chicken, mixing everything together until well combined.
7. Transfer the pasta mixture to a greased 9×13-inch baking dish. Sprinkle the shredded Mexican cheese blend evenly over the top.
8. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
9. Remove from the oven and let it cool slightly. Garnish with fresh cilantro before serving.
